A quick and easy one-pot meal with tender chicken, creamy pesto sauce, and perfectly cooked pasta.
Ingredients

- 12 oz penne pasta
- 1 lb boneless, skinless chicken breast, diced
- 2 tbsp olive oil
- 3 cloves garlic, minced
- 1 cup heavy cream
- 1/2 cup basil pesto
- 1/2 cup grated parmesan cheese
- 1/2 tsp salt
- 1/4 tsp black pepper
- 2 cups chicken broth
Instructions
- Heat olive oil in a large pot over medium-high heat.
- Add diced chicken and cook until browned, about 5-7 minutes.
- Add minced garlic and sauté for 30 seconds.
- Pour in chicken broth, heavy cream, and pesto. Stir well.
- Add uncooked pasta and bring to a boil.
- Reduce heat to medium-low, cover, and simmer for 12-15 minutes until pasta is tender.
- Stir in parmesan cheese, salt, and pepper.
- Serve hot with extra parmesan if desired.
Notes
- Use store-bought or homemade pesto.
- Add spinach or cherry tomatoes for extra vegetables.
- Leftovers keep well in the fridge for 3-4 days.
