Description

Easy-to-make mini cheesecakes with a patriotic twist, perfect for celebrations.


Ingredients

Scale
  • 1 1/2 cups graham cracker crumbs
  • 1/4 cup melted butter
  • 16 oz cream cheese, softened
  • 1/2 cup sugar
  • 2 eggs
  • 1 tsp vanilla extract
  • 1/2 cup blueberries
  • 1/2 cup strawberries, diced
  • 1/2 cup whipped cream

Instructions

  1. Preheat oven to 325°F (165°C). Line a muffin tin with paper liners.
  2. Mix graham cracker crumbs and melted butter. Press into the bottom of each liner.
  3. Beat cream cheese and sugar until smooth. Add eggs one at a time, then mix in vanilla.
  4. Divide the mixture evenly among the liners. Bake for 20 minutes or until set.
  5. Cool completely, then refrigerate for at least 2 hours.
  6. Top with whipped cream, blueberries, and strawberries before serving.
