Description
A delicious peach upside-down cake with caramelized peaches on top and a soft, moist cake underneath.

- 4 ripe peaches, peeled and sliced
- 1/2 cup unsalted butter, melted
- 1 cup brown sugar
- 1 1/2 cups all-purpose flour
- 1 tsp baking powder
- 1/2 tsp salt
- 1/2 cup granulated sugar
- 2 eggs
- 1 tsp vanilla extract
- 1/2 cup milk
Instructions
- Preheat oven to 350°F (175°C).
- Melt butter and mix with brown sugar. Spread evenly in a greased 9-inch round cake pan.
- Arrange peach slices over the butter-sugar mixture.
- In a bowl, whisk flour, baking powder, and salt.
- In another bowl, beat granulated sugar, eggs, and vanilla until fluffy.
- Alternately add flour mixture and milk to the egg mixture, mixing well.
- Pour batter over peaches and bake for 40-45 minutes.
- Cool for 10 minutes, then invert onto a serving plate.
Notes
- Use ripe but firm peaches for best results.
- Let cake cool slightly before inverting to prevent sticking.
