Description

A delicious peach upside down cake with a caramelized peach topping and moist cake base.


Ingredients

Scale
  • 4 ripe peaches, sliced
  • 1/2 cup unsalted butter, melted
  • 1 cup brown sugar
  • 1 1/2 cups all-purpose flour
  • 1 tsp baking powder
  • 1/2 tsp salt
  • 1 cup granulated sugar
  • 2 large eggs
  • 1 tsp vanilla extract
  • 1/2 cup milk

Instructions

  1. Preheat oven to 350°F (175°C).
  2. Melt butter in a 9-inch round cake pan and sprinkle brown sugar evenly over it.
  3. Arrange peach slices on top of the sugar mixture.
  4. Whisk flour, baking powder, and salt in a bowl.
  5. Beat granulated sugar, eggs, and vanilla in another bowl until fluffy.
  6. Alternately add flour mixture and milk to the egg mixture, mixing until smooth.
  7. Pour batter over the peaches and spread evenly.
  8. Bake for 40-45 minutes or until a toothpick comes out clean.
  9. Cool for 10 minutes, then invert onto a serving plate.

Notes

  • Use ripe but firm peaches for best results.
  • Let the cake cool slightly before inverting to prevent sticking.
  • Serve warm with ice cream if desired.
