A rich and moist dessert with a caramelized pecan topping.


Ingredients

  • 1 cup chopped pecans
  • 1 cup pitted dates, chopped
  • 1 tsp baking soda
  • 1 cup boiling water
  • 1/2 cup unsalted butter, softened
  • 3/4 cup brown sugar
  • 2 eggs
  • 1 tsp vanilla extract
  • 1 1/2 cups all-purpose flour
  • 1 tsp baking powder
  • 1/4 tsp salt
  • 1/2 cup heavy cream
  • 1/2 cup unsalted butter
  • 1 cup brown sugar

Instructions

  1. Preheat oven to 350°F. Grease a baking dish.
  2. Mix dates, baking soda, and boiling water. Let sit for 10 minutes.
  3. Cream butter and sugar. Add eggs and vanilla.
  4. Fold in flour, baking powder, and salt. Stir in date mixture.
  5. Pour batter into the dish. Bake for 35-40 minutes.
  6. Heat cream, butter, and sugar in a saucepan for the sauce.
  7. Pour sauce over baked pudding. Broil for 2 minutes.
  8. Top with pecans and serve warm.

  • Use fresh dates for best texture.
  • Let the pudding cool slightly before adding sauce.
