Easy-to-make cornbread muffins that are perfect for any meal.

- 1 cup cornmeal
- 1 cup all-purpose flour
- 1/4 cup sugar
- 1 tbsp baking powder
- 1/2 tsp salt
- 1 cup milk
- 1/3 cup vegetable oil
- 1 egg
Instructions
- Preheat your oven to 400°F (200°C).
- Line a muffin tin with paper liners or grease it lightly.
- In a large bowl, mix the cornmeal, flour, sugar, baking powder, and salt.
- In another bowl, whisk together the milk, vegetable oil, and egg.
- Combine the wet ingredients with the dry ingredients and stir until just mixed.
- Pour the batter into the prepared muffin tin, filling each cup about 2/3 full.
- Bake for 15 to 20 minutes, or until a toothpick inserted into the center comes out clean.
- Let the muffins cool in the tin for 5 minutes, then transfer to a wire rack to cool completely.
Notes
- You can add 1/2 cup of corn kernels or shredded cheese to the batter for extra flavor.
- Store the muffins in an airtight container for up to 3 days.
