Ingredients

  • 2 boneless, skinless chicken breasts
  • 8 oz pasta (penne or fusilli recommended)
  • 1/2 cup basil pesto
  • 2 tbsp olive oil
  • 2 cloves garlic, minced
  • 1/4 cup grated parmesan cheese
  • Salt and pepper to taste

Instructions

  1. Cook pasta according to package instructions. Drain and set aside.
  2. Heat olive oil in a pan over medium heat. Add minced garlic and sauté for 30 seconds.
  3. Add chicken breasts to the pan. Cook for 6-7 minutes per side until fully cooked.
  4. Remove chicken, let rest for 2 minutes, then slice into strips.
  5. Toss cooked pasta with pesto until evenly coated.
  6. Top pasta with sliced chicken and sprinkle with parmesan cheese.
