- 2 boneless, skinless chicken breasts
- 1/4 cup pesto sauce
- 4 cups mixed salad greens
- 1/2 cup cherry tomatoes, halved
- 1/4 cup red onion, thinly sliced
- 1/4 cup feta cheese, crumbled
- 2 tbsp olive oil
- 1 tbsp lemon juice
- Salt and pepper to taste
Instructions
- Preheat grill to medium-high heat.
- Coat chicken breasts with 2 tbsp pesto and season with salt and pepper.
- Grill chicken for 6-7 minutes per side, until fully cooked.
- Let chicken rest for 5 minutes, then slice into strips.
- In a large bowl, combine salad greens, tomatoes, red onion, and feta.
- Whisk together remaining pesto, olive oil, and lemon juice to make dressing.
- Toss salad with dressing and top with grilled chicken.

- Substitute mozzarella for feta if preferred.
