- 2 cups all-purpose flour
- 1 cup granulated sugar
- 1 cup crushed pineapple (drained)
- 1/2 cup shredded coconut
- 1/2 cup unsalted butter (softened)
- 2 eggs
- 1 tsp baking powder
- 1 tsp vanilla extract
- 1/2 cup coconut milk
Instructions
- Preheat oven to 350°F (175°C). Grease a 9-inch round cake pan.
- In a bowl, mix flour, sugar, and baking powder.
- Add butter, eggs, vanilla, and coconut milk. Beat until smooth.
- Fold in crushed pineapple and shredded coconut.
- Pour batter into the pan. Bake for 35-40 minutes or until a toothpick comes out clean.
- Cool before serving.

- Drain pineapple well to avoid excess moisture.
- Toast shredded coconut for extra flavor.
