- 1 cup diced pineapple
- 1/2 cup diced carrots
- 1/2 cup peas
- 2 cloves garlic, minced
- 2 tbsp soy sauce
- 1 tbsp vegetable oil
- 2 eggs, beaten
- 1/4 cup chopped green onions
Instructions
- Heat oil in a pan over medium heat.
- Add garlic and sauté for 30 seconds.
- Add carrots and peas, cook for 2 minutes.
- Push vegetables aside and scramble eggs in the pan.
- Add rice, pineapple, and soy sauce. Stir well.
- Cook for 3-4 minutes until heated through.
- Garnish with green onions before serving.
