- 1 cup brown sugar
- 1 can pineapple slices (20 oz)
- Maraschino cherries
- 1 1/2 cups all-purpose flour
- 1 1/2 tsp baking powder
- 1/4 tsp salt
- 1/2 cup unsalted butter, softened
- 1 cup granulated sugar
- 2 eggs
- 1 tsp vanilla extract
- 1/2 cup milk
Instructions
- Preheat oven to 350°F.
- Melt 1/4 cup butter in a skillet and stir in brown sugar. Spread in a 9-inch cake pan.
- Arrange pineapple slices and cherries on the sugar mixture.
- Whisk flour, baking powder, and salt in a bowl.
- Cream softened butter and granulated sugar until fluffy. Add eggs and vanilla.
- Alternate adding flour mixture and milk to the batter.
- Pour batter over pineapple in the pan.
- Bake for 40-45 minutes until golden.
- Cool for 10 minutes, then invert onto a plate.
Notes
- Use fresh pineapple for a brighter flavor.
- Let the cake cool slightly before flipping to avoid breaking.
- Store leftovers covered at room temperature.
