Instructions
- Cream butter and sugar until light and fluffy.
- Beat in egg and vanilla extract.
- Mix in flour and salt until dough forms.
- Divide dough in half. Mix ground pistachios and food coloring into one half.
- Roll plain and pistachio dough into rectangles of equal size.
- Layer pistachio dough over plain dough and roll tightly into a log.
- Chill for 1 hour, then slice into 1/4-inch rounds.
- Bake at 350°F for 10-12 minutes until edges are golden.
