A simple and rustic plum galette with a flaky crust and sweet-tart filling.

- 1 1/2 cups all-purpose flour
- 1/4 teaspoon salt
- 1/2 cup unsalted butter, chilled and diced
- 4–5 tablespoons ice water
- 4–5 ripe plums, sliced
- 2 tablespoons granulated sugar
- 1 tablespoon cornstarch
- 1/2 teaspoon cinnamon
- 1 egg, beaten (for egg wash)
- 1 tablespoon turbinado sugar (for sprinkling)
Instructions
- Mix flour and salt in a bowl. Cut in butter until crumbly.
- Add ice water, 1 tablespoon at a time, until dough forms.
- Shape dough into a disk, wrap in plastic, and chill for 30 minutes.
- Preheat oven to 375°F (190°C).
- Roll dough into a 12-inch circle on a floured surface.
- Toss plums with sugar, cornstarch, and cinnamon.
- Arrange plums in the center of the dough, leaving a 2-inch border.
- Fold edges over the filling, pleating as needed.
- Brush crust with egg wash and sprinkle with turbinado sugar.
- Bake for 35-40 minutes until golden brown.
- Cool slightly before serving.
Notes
- Use ripe but firm plums for best results.
- Chill dough well for easier handling.
- Serve warm with vanilla ice cream if desired.
