Description

A simple and rustic plum galette with a flaky crust and sweet-tart filling.


Ingredients

Scale
  • 1 1/2 cups all-purpose flour
  • 1/4 teaspoon salt
  • 1/2 cup unsalted butter, chilled and diced
  • 45 tablespoons ice water
  • 45 ripe plums, sliced
  • 2 tablespoons granulated sugar
  • 1 tablespoon cornstarch
  • 1/2 teaspoon cinnamon
  • 1 egg, beaten (for egg wash)
  • 1 tablespoon turbinado sugar (for sprinkling)

Instructions

  1. Mix flour and salt in a bowl. Cut in butter until crumbly.
  2. Add ice water, 1 tablespoon at a time, until dough forms.
  3. Shape dough into a disk, wrap in plastic, and chill for 30 minutes.
  4. Preheat oven to 375°F (190°C).
  5. Roll dough into a 12-inch circle on a floured surface.
  6. Toss plums with sugar, cornstarch, and cinnamon.
  7. Arrange plums in the center of the dough, leaving a 2-inch border.
  8. Fold edges over the filling, pleating as needed.
  9. Brush crust with egg wash and sprinkle with turbinado sugar.
  10. Bake for 35-40 minutes until golden brown.
  11. Cool slightly before serving.

Notes

  • Use ripe but firm plums for best results.
  • Chill dough well for easier handling.
  • Serve warm with vanilla ice cream if desired.
