Ingredients

- 4 lamb shanks
- 1 cup pomegranate juice
- 2 tbsp honey
- 3 cloves garlic, minced
- 1 tbsp olive oil
- 1 tsp salt
- 1/2 tsp black pepper
- 1 tsp ground cumin
- 1 tsp smoked paprika
- 1/2 cup chicken stock
Instructions
- Preheat oven to 350°F (175°C).
- Season lamb shanks with salt, pepper, cumin, and smoked paprika.
- Heat olive oil in a large oven-safe pot over medium-high heat.
- Sear lamb shanks on all sides until browned.
- Remove shanks and set aside.
- Add garlic to the pot and sauté for 30 seconds.
- Pour in pomegranate juice, honey, and chicken stock.
- Return lamb shanks to the pot, cover, and bake for 2 hours.
- Remove lid and bake for another 30 minutes to thicken the glaze.
- Serve hot, drizzled with the pomegranate glaze.
Notes
- For a richer flavor, marinate the lamb shanks overnight.
- Garnish with fresh pomegranate seeds before serving.
- Serve with mashed potatoes or couscous.
