Ingredients

- 1 (4-5 pound) standing rib roast
- 2 tablespoons porcini mushroom powder
- 1 tablespoon kosher salt
- 1 tablespoon freshly ground black pepper
- 2 tablespoons olive oil
- 4 cloves garlic, minced
- 1 teaspoon fresh rosemary, chopped
- 1 teaspoon fresh thyme, chopped
Instructions
- Preheat oven to 450°F (230°C).
- Pat the rib roast dry with paper towels.
- In a small bowl, mix porcini powder, salt, pepper, olive oil, garlic, rosemary, and thyme.
- Rub the mixture evenly over the entire surface of the roast.
- Place the roast on a rack in a roasting pan, fat side up.
- Roast for 15 minutes, then reduce heat to 325°F (165°C).
- Cook until internal temperature reaches 120°F (49°C) for rare or 130°F (54°C) for medium-rare (about 2-2.5 hours).
- Remove from oven and let rest for 20 minutes before slicing.
Notes
- Use a meat thermometer for accurate doneness.
- Letting the roast rest ensures juiciness.
- Porcini powder can be made by grinding dried porcini mushrooms in a spice grinder.
