- 1 1/2 cups graham cracker crumbs
- 1/4 cup granulated sugar
- 1/2 tsp ground cinnamon
- 1/2 cup unsalted butter, melted
- 16 oz cream cheese, softened
- 3/4 cup granulated sugar
- 1 cup pumpkin puree
- 2 large eggs
- 1 tsp vanilla extract
- 1 tsp ground cinnamon
- 1/2 tsp ground nutmeg
- 1/4 tsp ground ginger
Instructions
- Preheat oven to 350°F. Line an 8×8-inch baking pan with parchment paper.
- Mix graham cracker crumbs, sugar, cinnamon, and melted butter. Press into the pan.
- Bake crust for 10 minutes. Let it cool slightly.
- Beat cream cheese and sugar until smooth. Add pumpkin, eggs, vanilla, and spices.
- Pour filling over crust. Bake for 30-35 minutes until set.
- Cool completely, then refrigerate for at least 2 hours before slicing.
Notes
- Use canned pumpkin puree, not pumpkin pie filling.
- Let bars chill thoroughly for cleaner slices.
- Store leftovers in the fridge for up to 5 days.
