- 1 1/2 cups graham cracker crumbs
- 1/4 cup granulated sugar
- 1/2 cup melted butter
- 16 oz cream cheese, softened
- 3/4 cup canned pumpkin puree
- 1/2 cup granulated sugar
- 2 large eggs
- 1 tsp vanilla extract
- 1 tsp pumpkin pie spice
Instructions
- Preheat oven to 350°F. Line an 8×8-inch pan with parchment paper.
- Mix graham cracker crumbs, 1/4 cup sugar, and melted butter. Press into the pan.
- Bake crust for 10 minutes. Let cool.
- Beat cream cheese until smooth. Add pumpkin, 1/2 cup sugar, eggs, vanilla, and pumpkin pie spice. Mix well.
- Pour filling over crust. Bake for 30-35 minutes until set.
- Cool completely before cutting into bars.

- Use full-fat cream cheese for best texture.
- Chill bars for 2 hours for easier slicing.
