Ingredients

- 1 3/4 cups all-purpose flour
- 1 cup granulated sugar
- 1/2 cup brown sugar
- 1 tsp baking soda
- 1/2 tsp salt
- 2 tsp cinnamon
- 1/4 tsp nutmeg
- 1/4 tsp cloves
- 2 eggs
- 1 cup pumpkin puree
- 1/2 cup vegetable oil
- 1 tsp vanilla extract
- 1 cup chocolate chips
Instructions
- Preheat oven to 375°F (190°C). Line a muffin tin with paper liners.
- In a large bowl, whisk flour, sugars, baking soda, salt, cinnamon, nutmeg, and cloves.
- In another bowl, beat eggs, pumpkin puree, oil, and vanilla.
- Pour wet ingredients into dry ingredients and mix until just combined.
- Fold in chocolate chips.
- Scoop batter into muffin cups, filling 3/4 full.
- Bake for 18-22 minutes or until a toothpick comes out clean.
- Cool for 5 minutes before transferring to a wire rack.
Notes
- Use canned or homemade pumpkin puree.
- Do not overmix the batter to keep muffins tender.
- Store in an airtight container for up to 3 days.
