Description

Moist and fluffy pumpkin muffins packed with chocolate chips. Perfect for breakfast or a snack.


Ingredients

Scale
  • 1 3/4 cups all-purpose flour
  • 1 cup granulated sugar
  • 1/2 cup brown sugar
  • 1 tsp baking soda
  • 1/2 tsp salt
  • 2 tsp cinnamon
  • 1/4 tsp nutmeg
  • 1/4 tsp cloves
  • 2 eggs
  • 1 cup pumpkin puree
  • 1/2 cup vegetable oil
  • 1 tsp vanilla extract
  • 1 cup chocolate chips

Instructions

  1. Preheat oven to 375°F (190°C). Line a muffin tin with paper liners.
  2. In a large bowl, whisk flour, sugars, baking soda, salt, cinnamon, nutmeg, and cloves.
  3. In another bowl, beat eggs, pumpkin puree, oil, and vanilla.
  4. Pour wet ingredients into dry ingredients and mix until just combined.
  5. Fold in chocolate chips.
  6. Scoop batter into muffin cups, filling 3/4 full.
  7. Bake for 18-22 minutes or until a toothpick comes out clean.
  8. Cool for 5 minutes before transferring to a wire rack.

Notes

  • Use canned or homemade pumpkin puree.
  • Do not overmix the batter to keep muffins tender.
  • Store in an airtight container for up to 3 days.
