Description

Fluffy pumpkin pancakes loaded with chocolate chips for a delicious fall breakfast.


Ingredients

Scale
  • 1 cup all-purpose flour
  • 1 tbsp sugar
  • 2 tsp baking powder
  • 1/2 tsp cinnamon
  • 1/4 tsp nutmeg
  • 1/4 tsp ginger
  • 1/2 tsp salt
  • 3/4 cup milk
  • 1/2 cup pumpkin puree
  • 1 egg
  • 2 tbsp melted butter
  • 1/2 cup chocolate chips

Instructions

  1. Whisk dry ingredients in a bowl
  2. Mix wet ingredients in separate bowl
  3. Combine wet and dry ingredients
  4. Fold in chocolate chips
  5. Heat griddle over medium heat
  6. Pour 1/4 cup batter per pancake
  7. Cook until bubbles form, then flip
  8. Cook other side until golden brown

Notes

  • Use canned pumpkin puree
  • Don’t overmix the batter
  • Adjust chocolate chips to taste
