Description

A moist and spiced loaf combining pumpkin and gingerbread flavors, perfect for fall.


Ingredients

Scale
  • 1 cup pumpkin puree
  • 1/2 cup molasses
  • 1/4 cup brown sugar
  • 1/4 cup vegetable oil
  • 1 large egg
  • 1 1/2 cups all-purpose flour
  • 1 tsp baking soda
  • 1/2 tsp salt
  • 1 tsp ground ginger
  • 1 tsp cinnamon
  • 1/4 tsp nutmeg
  • 1/4 tsp cloves
  • 1/2 cup hot water

Instructions

  1. Preheat oven to 350°F (175°C). Grease a loaf pan.
  2. Mix pumpkin puree, molasses, brown sugar, oil, and egg in a bowl.
  3. In another bowl, whisk flour, baking soda, salt, and spices.
  4. Combine wet and dry ingredients. Stir in hot water.
  5. Pour batter into the loaf pan. Bake for 50-60 minutes.
  6. Cool before slicing.

Notes

  • Use canned or homemade pumpkin puree.
  • Check doneness with a toothpick.
  • Store in an airtight container for up to 3 days.
