Ingredients

- 1 cup pumpkin puree
- 1/2 cup molasses
- 1/4 cup brown sugar
- 1/4 cup vegetable oil
- 1 large egg
- 1 1/2 cups all-purpose flour
- 1 tsp baking soda
- 1/2 tsp salt
- 1 tsp ground ginger
- 1 tsp cinnamon
- 1/4 tsp nutmeg
- 1/4 tsp cloves
- 1/2 cup hot water
Instructions
- Preheat oven to 350°F (175°C). Grease a loaf pan.
- Mix pumpkin puree, molasses, brown sugar, oil, and egg in a bowl.
- In another bowl, whisk flour, baking soda, salt, and spices.
- Combine wet and dry ingredients. Stir in hot water.
- Pour batter into the loaf pan. Bake for 50-60 minutes.
- Cool before slicing.
Notes
- Use canned or homemade pumpkin puree.
- Check doneness with a toothpick.
- Store in an airtight container for up to 3 days.
