Description

A comforting dish featuring soft pumpkin gnocchi paired with a creamy Parmesan sauce.


Ingredients

Scale
  • 2 cups mashed pumpkin
  • 2 cups all-purpose flour
  • 1 egg
  • 1/2 tsp salt
  • 1/4 tsp nutmeg
  • 1 cup heavy cream
  • 1/2 cup grated Parmesan
  • 1 tbsp butter
  • 1 clove garlic, minced
  • Salt and pepper to taste

Instructions

  1. Mix mashed pumpkin, flour, egg, salt, and nutmeg to form a dough.
  2. Roll dough into ropes and cut into small pieces.
  3. Boil gnocchi until they float, then drain.
  4. In a pan, melt butter and sauté garlic.
  5. Add cream and Parmesan, stirring until smooth.
  6. Toss gnocchi in the sauce and serve hot.

  • Use fresh pumpkin for best flavor.
  • Dust gnocchi lightly with flour to prevent sticking.
