- 12 lasagna noodles
- 2 cups pumpkin puree
- 2 cups ricotta cheese
- 2 cups fresh spinach, chopped
- 1 egg
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1/4 teaspoon nutmeg
- 2 cups shredded mozzarella cheese
- 1/2 cup grated Parmesan cheese
- 2 cups marinara sauce
Instructions
- Preheat oven to 375°F.
- Cook lasagna noodles according to package directions.
- Mix ricotta, egg, spinach, salt, pepper, and nutmeg in a bowl.
- Spread a thin layer of marinara sauce in a baking dish.
- Layer noodles, pumpkin puree, ricotta mixture, and mozzarella cheese.
- Repeat layers ending with noodles, marinara, and Parmesan cheese.
- Bake covered for 30 minutes, then uncovered for 15 minutes.
- Let rest 10 minutes before serving.

- Use fresh pumpkin puree for best flavor.
- Drain ricotta well to prevent watery lasagna.
- Substitute butternut squash for pumpkin if desired.
