Description

Delicious pumpkin pecan truffles with a rich, creamy filling and a crunchy pecan coating. Perfect for fall treats or holiday gifts.


Ingredients

Scale
  • 1 cup pumpkin puree
  • 1 cup finely chopped pecans
  • 1/2 cup almond flour
  • 1/4 cup maple syrup
  • 1 tsp cinnamon
  • 1/2 tsp nutmeg
  • 1/4 tsp ginger
  • 1/4 tsp salt
  • 1/2 cup dark chocolate chips (for coating)
  • 1 tsp coconut oil (for coating)

Instructions

  1. Mix pumpkin puree, almond flour, maple syrup, cinnamon, nutmeg, ginger, and salt in a bowl.
  2. Fold in half of the chopped pecans.
  3. Chill the mixture for 30 minutes to firm up.
  4. Roll into 1-inch balls.
  5. Dip each ball in melted dark chocolate mixed with coconut oil.
  6. Roll in remaining chopped pecans.
  7. Place on a parchment-lined tray and refrigerate for 1 hour before serving.
