- 1 cup finely chopped pecans
- 1/2 cup almond flour
- 1/4 cup maple syrup
- 1 tsp cinnamon
- 1/2 tsp nutmeg
- 1/4 tsp ginger
- 1/4 tsp salt
- 1/2 cup dark chocolate chips (for coating)
- 1 tsp coconut oil (for coating)
Instructions
- Mix pumpkin puree, almond flour, maple syrup, cinnamon, nutmeg, ginger, and salt in a bowl.
- Fold in half of the chopped pecans.
- Chill the mixture for 30 minutes to firm up.
- Roll into 1-inch balls.
- Dip each ball in melted dark chocolate mixed with coconut oil.
- Roll in remaining chopped pecans.
- Place on a parchment-lined tray and refrigerate for 1 hour before serving.
