Ingredients

  • 1 cup cooked rice
  • 1 cup pumpkin puree
  • 2 cups milk
  • 1/4 cup sugar
  • 1 tsp cinnamon
  • 1/2 tsp nutmeg
  • 1/4 tsp ginger
  • 1/2 tsp vanilla extract
  • Pinch of salt

Instructions

  1. Combine rice, pumpkin puree, milk, sugar, cinnamon, nutmeg, ginger, and salt in a saucepan.
  2. Cook over medium heat, stirring frequently, until the mixture thickens (about 15-20 minutes).
  3. Remove from heat and stir in vanilla extract.
  4. Serve warm or chilled.
