Instructions
- Combine rice, pumpkin puree, milk, sugar, cinnamon, nutmeg, ginger, and salt in a saucepan.
- Cook over medium heat, stirring frequently, until the mixture thickens (about 15-20 minutes).
- Remove from heat and stir in vanilla extract.
- Serve warm or chilled.

- For a richer taste, substitute half the milk with cream.
