Description

A creamy and comforting pumpkin soup flavored with fresh sage, perfect for chilly days.


Ingredients

Scale
  • 2 tbsp olive oil
  • 1 medium onion, diced
  • 2 garlic cloves, minced
  • 4 cups pumpkin puree
  • 4 cups vegetable broth
  • 1 cup coconut milk
  • 8 fresh sage leaves
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 1/4 tsp nutmeg

Instructions

  1. Heat olive oil in a large pot over medium heat.
  2. Add onion and garlic, cook until softened.
  3. Stir in pumpkin puree, vegetable broth, and coconut milk.
  4. Add sage leaves, salt, pepper, and nutmeg.
  5. Simmer for 20 minutes, stirring occasionally.
  6. Remove sage leaves and blend the soup until smooth.
  7. Serve warm, garnished with extra sage if desired.
