Description

A moist pumpkin spice cake topped with rich brown sugar cream cheese frosting.


Ingredients

Scale
  • 2 cups all-purpose flour
  • 1 1/2 tsp baking powder
  • 1 tsp baking soda
  • 2 tsp pumpkin spice
  • 1/2 tsp salt
  • 1 cup pumpkin puree
  • 1/2 cup vegetable oil
  • 3/4 cup granulated sugar
  • 1/2 cup brown sugar
  • 2 eggs
  • 1 tsp vanilla extract
  • 8 oz cream cheese (softened)
  • 1/4 cup unsalted butter (softened)
  • 1 cup powdered sugar

Instructions

  1. Preheat oven to 350°F. Grease a 9×9 inch baking pan.
  2. Whisk flour, baking powder, baking soda, pumpkin spice, and salt in a bowl.
  3. In another bowl, mix pumpkin puree, oil, sugars, eggs, and vanilla.
  4. Combine wet and dry ingredients until smooth.
  5. Pour batter into pan and bake for 30-35 minutes. Cool completely.
  6. Beat cream cheese and butter until smooth. Add brown sugar and powdered sugar.
  7. Spread frosting on cooled cake. Slice and serve.
