Description

Delicious homemade pumpkin spice caramels with a rich, creamy texture and warm autumn flavors.


Ingredients

Scale
  • 1 cup heavy cream
  • 1/2 cup pumpkin puree
  • 1 tsp pumpkin spice
  • 1/4 tsp salt
  • 1 1/2 cups granulated sugar
  • 1/4 cup light corn syrup
  • 1/4 cup water
  • 4 tbsp unsalted butter, cubed
  • 1 tsp vanilla extract

Instructions

  1. Line an 8×8-inch pan with parchment paper.
  2. In a saucepan, heat cream, pumpkin puree, pumpkin spice, and salt over medium heat. Stir until smooth.
  3. In another saucepan, combine sugar, corn syrup, and water. Cook over medium-high heat until sugar dissolves.
  4. Continue cooking until the sugar mixture reaches 320°F (160°C).
  5. Slowly pour the cream mixture into the sugar mixture while stirring.
  6. Cook until the mixture reaches 245°F (118°C).
  7. Remove from heat and stir in butter and vanilla.
  8. Pour into the prepared pan and let cool completely.
  9. Cut into squares and wrap in parchment paper.

  • Store in an airtight container for up to 2 weeks.
