Ingredients

- 1 cup heavy cream
- 1/2 cup pumpkin puree
- 1 tsp pumpkin spice
- 1/4 tsp salt
- 1 1/2 cups granulated sugar
- 1/4 cup light corn syrup
- 1/4 cup water
- 4 tbsp unsalted butter, cubed
- 1 tsp vanilla extract
Instructions
- Line an 8×8-inch pan with parchment paper.
- In a saucepan, heat cream, pumpkin puree, pumpkin spice, and salt over medium heat. Stir until smooth.
- In another saucepan, combine sugar, corn syrup, and water. Cook over medium-high heat until sugar dissolves.
- Continue cooking until the sugar mixture reaches 320°F (160°C).
- Slowly pour the cream mixture into the sugar mixture while stirring.
- Cook until the mixture reaches 245°F (118°C).
- Remove from heat and stir in butter and vanilla.
- Pour into the prepared pan and let cool completely.
- Cut into squares and wrap in parchment paper.

- Use a candy thermometer for accuracy.
- Store in an airtight container for up to 2 weeks.
