Ingredients

- 1/4 cup chia seeds
- 1 cup almond milk
- 1/4 cup pumpkin puree
- 1 tbsp maple syrup
- 1/2 tsp pumpkin spice
- 1/4 tsp vanilla extract
- Pinch of salt
Instructions
- Mix chia seeds and almond milk in a bowl.
- Add pumpkin puree, maple syrup, pumpkin spice, vanilla extract, and salt. Stir well.
- Let it sit for 5 minutes, then stir again to prevent clumping.
- Cover and refrigerate for at least 2 hours or overnight.
- Stir before serving and top with nuts or fruit if desired.
Notes
- Adjust sweetness by adding more or less maple syrup.
- Use any plant-based milk as a substitute.
- Store leftovers in the fridge for up to 3 days.
