A delicious cake inspired by the flavors of a pumpkin spice latte, perfect for fall.
Ingredients

- 2 cups all-purpose flour
- 1 1/2 cups sugar
- 1 tsp baking soda
- 1/2 tsp salt
- 2 tsp pumpkin pie spice
- 1 cup canned pumpkin puree
- 2 large eggs
- 1/2 cup vegetable oil
- 1/2 cup strong brewed coffee, cooled
- 1 tsp vanilla extract
Instructions
- Preheat your oven to 350°F (175°C). Grease a 9×13-inch baking pan.
- In a large bowl, mix flour, sugar, baking soda, salt, and pumpkin pie spice.
- Add pumpkin puree, eggs, oil, coffee, and vanilla. Stir until well combined.
- Pour the batter into the prepared pan.
- Bake for 30-35 minutes, or until a toothpick inserted comes out clean.
- Let cool before serving.
Notes
- For extra flavor, add a sprinkle of cinnamon on top before baking.
- Store leftovers in an airtight container for up to 3 days.
