Delicious pumpkin spice latte cupcakes with a hint of coffee and warm spices.
Ingredients

- 1 ½ cups all-purpose flour
- 1 tsp baking powder
- ½ tsp baking soda
- 1 tsp pumpkin pie spice
- ½ tsp salt
- ½ cup canned pumpkin puree
- ½ cup granulated sugar
- ½ cup brown sugar
- ½ cup vegetable oil
- 2 large eggs
- 1 tsp vanilla extract
- ½ cup strong brewed coffee, cooled
Instructions
- Preheat oven to 350°F (175°C). Line a muffin tin with cupcake liners.
- In a bowl, whisk flour, baking powder, baking soda, pumpkin pie spice, and salt.
- In another bowl, mix pumpkin puree, granulated sugar, brown sugar, oil, eggs, and vanilla.
- Gradually add dry ingredients to wet ingredients, alternating with coffee.
- Divide batter evenly among cupcake liners, filling each 2/3 full.
- Bake for 18-20 minutes or until a toothpick comes out clean.
- Let cool before frosting.
Notes
- Use room temperature eggs for better mixing.
- Adjust coffee strength to taste.
- Store in an airtight container for up to 3 days.
