Delicious pumpkin muffins with a sweet streusel topping, perfect for breakfast or a snack.
Ingredients

- 1 3/4 cups all-purpose flour
- 1 cup canned pumpkin puree
- 1/2 cup granulated sugar
- 1/2 cup brown sugar
- 1/2 cup vegetable oil
- 2 large eggs
- 1 tsp baking soda
- 1 tsp ground cinnamon
- 1/2 tsp salt
- 1/2 tsp ground nutmeg
- 1/4 tsp ground cloves
- 1/4 cup chopped pecans (optional)
Instructions
- Preheat oven to 375°F (190°C). Line a muffin tin with paper liners.
- In a large bowl, mix flour, baking soda, cinnamon, salt, nutmeg, and cloves.
- In another bowl, whisk pumpkin puree, sugars, oil, and eggs until smooth.
- Combine wet and dry ingredients, stirring until just blended.
- Fill muffin cups 2/3 full with batter.
- Sprinkle streusel topping evenly over each muffin.
- Bake for 20-25 minutes or until a toothpick inserted comes out clean.
- Cool in the pan for 5 minutes, then transfer to a wire rack.
Notes
- Store muffins in an airtight container for up to 3 days.
- For extra crunch, add chopped pecans to the streusel topping.
