Ingredients

- 2 boneless, skinless chicken breasts, sliced
- 1 tbsp olive oil
- 1 bell pepper, sliced
- 1 onion, sliced
- 1 tsp cumin
- 1 tsp chili powder
- 1/2 tsp garlic powder
- 1/2 tsp salt
- 1/2 tsp black pepper
- 1 cup shredded cheese (cheddar or Monterey Jack)
- Fresh cilantro, for garnish
Instructions
- Heat olive oil in a skillet over medium heat.
- Add chicken and cook until no longer pink, about 5-6 minutes.
- Add bell pepper and onion, sauté until softened, about 5 minutes.
- Sprinkle with cumin, chili powder, garlic powder, salt, and black pepper. Stir well.
- Top with shredded cheese and cover until melted, about 2 minutes.
- Garnish with fresh cilantro before serving.
Notes
- Serve with warm tortillas or rice.
- Adjust spices to taste.
