Description

Raspberry thumbprint bars are a delicious and easy-to-make dessert with a buttery crust, sweet raspberry jam filling, and a crumbly topping.


Ingredients

  • 1 1/2 cups all-purpose flour
  • 1/2 cup granulated sugar
  • 1/4 teaspoon salt
  • 1/2 cup unsalted butter, cold and cubed
  • 1 large egg yolk
  • 1/2 teaspoon vanilla extract
  • 1/2 cup raspberry jam

Instructions

  1. Preheat your oven to 350°F (175°C). Line an 8-inch square baking pan with parchment paper.
  2. In a bowl, mix flour, sugar, and salt. Cut in the cold butter until the mixture resembles coarse crumbs.
  3. Stir in egg yolk and vanilla until the dough comes together. Press 2/3 of the dough into the prepared pan.
  4. Spread raspberry jam evenly over the dough. Crumble the remaining dough on top.
  5. Bake for 25-30 minutes or until lightly golden. Cool completely before cutting into bars.
