- 8 corn tortillas

- 1 tsp cumin
- 1 tsp garlic powder
- Salt and pepper to taste
Instructions
- Preheat oven to 350°F (175°C).
- Heat olive oil in a pan and sauté onions until soft.
- Add shredded chicken, cumin, garlic powder, salt, and pepper. Mix well.
- Warm tortillas briefly to make them pliable.
- Fill each tortilla with chicken mixture and roll tightly.
- Place rolled tortillas seam-side down in a baking dish.
- Pour enchilada sauce over the top and sprinkle with cheese.
- Bake for 20 minutes or until cheese is melted and bubbly.
- Garnish with chopped cilantro before serving.
