- 1 1/2 cups all-purpose flour
- 2 tbsp cocoa powder
- 1/2 tsp baking soda
- 1/4 tsp salt
- 1/2 cup unsalted butter, softened
- 1 cup granulated sugar
- 1 large egg
- 1 tsp vanilla extract
- 1 tbsp red food coloring
- 1/2 cup buttermilk
- 4 oz cream cheese, softened
- 1/4 cup unsalted butter, softened
- 1 1/2 cups powdered sugar
- 1/2 tsp vanilla extract
Instructions
- Preheat oven to 375°F (190°C). Line a baking sheet with parchment paper.
- In a bowl, whisk flour, cocoa powder, baking soda, and salt.
- In another bowl, beat butter and sugar until fluffy. Add egg, vanilla, and food coloring. Mix well.
- Alternately add dry ingredients and buttermilk to the wet mixture, mixing until combined.
- Drop tablespoon-sized batter onto the baking sheet, spacing 2 inches apart.
- Bake for 10-12 minutes. Cool completely on a wire rack.
- For the filling, beat cream cheese and butter until smooth. Add powdered sugar and vanilla, mixing until creamy.
- Spread filling on the flat side of one cookie and sandwich with another.
Notes
- Store in an airtight container for up to 3 days.
- For best results, let cookies cool before filling.
- Adjust food coloring for a deeper red color.
