Ingredients
Cookie Dough:
1 cup all-purpose flour
1/2 cup cocoa powder
1 tsp baking powder
1/4 tsp salt
1/2 cup unsalted butter, softened
1 cup granulated sugar
2 large eggs
1 tsp vanilla extract
1/2 cup powdered sugar (for rolling)
Filling:
12 mini Reese’s Peanut Butter Cups (or homemade peanut butter filling)
Instructions
In a medium bowl, whisk together the flour, cocoa powder, baking powder, and salt. Set aside.
In a large mixing bowl, cream together the softened butter and sugar until light and fluffy. Add the eggs, one at a time, mixing well after each addition. Stir in the vanilla extract.
Gradually add the dry ingredients to the wet ingredients, mixing until a soft dough forms. Cover and refrigerate the dough for at least 1 hour.
Preheat your oven to 350°F (175°C) and line baking sheets with parchment paper.
Scoop a tablespoon of dough, flatten it in your hand, and place a Reese’s Peanut Butter Cup in the center. Wrap the dough around the peanut butter cup to completely encase it. Roll each ball in powdered sugar.
Place the dough balls on the prepared baking sheets, spacing them about 2 inches apart. Bake for 10-12 minutes, or until the cookies are set and have a crackled appearance.
Allow the cookies to cool on the baking sheet for a few minutes before transferring to a wire rack to cool completely.
