Description
A refreshing Mediterranean pasta salad packed with fresh vegetables, olives, and feta cheese, dressed in a light olive oil and lemon dressing.
Ingredients

- 250g pasta (penne or fusilli)
- 1 cucumber, diced
- 1 red bell pepper, diced
- 1 cup cherry tomatoes, halved
- 1/2 red onion, thinly sliced
- 1/2 cup Kalamata olives
- 1/2 cup feta cheese, crumbled
- 1/4 cup fresh parsley, chopped
- 3 tbsp olive oil
- 2 tbsp lemon juice
- 1 tsp dried oregano
- Salt and pepper to taste
Instructions
- Cook pasta according to package instructions. Drain and rinse under cold water.
- In a large bowl, combine cucumber, bell pepper, cherry tomatoes, red onion, olives, and feta cheese.
- Add cooled pasta to the bowl.
- In a small bowl, whisk together olive oil, lemon juice, oregano, salt, and pepper.
- Pour the dressing over the salad and toss gently to coat.
- Sprinkle with fresh parsley before serving.
Notes
- Chill for at least 1 hour before serving for best flavor.
- Add grilled chicken or shrimp for extra protein.
- Store leftovers in an airtight container for up to 3 days.
