- 2 cups chopped rhubarb
- 1 cup granulated sugar
- 1/4 cup all-purpose flour
- 2 eggs
- 1/2 cup butter, softened
- 1 cup brown sugar
- 1 1/2 cups all-purpose flour
- 1/2 teaspoon baking powder
- 1/4 teaspoon salt
- 1 teaspoon vanilla extract
Instructions
- Preheat oven to 350°F (175°C).
- Mix rhubarb, granulated sugar, and 1/4 cup flour in a bowl. Set aside.
- Beat eggs, butter, and brown sugar until smooth.
- Add 1 1/2 cups flour, baking powder, salt, and vanilla. Mix well.
- Press half the dough into a greased 9×13-inch pan.
- Spread rhubarb mixture over the dough.
- Crumble remaining dough over the rhubarb.
- Bake for 40-45 minutes or until golden brown.
- Cool before cutting into bars.
