Ingredients

- 2 pounds Yukon Gold potatoes, peeled and quartered
- 1 whole garlic bulb
- 1/2 cup unsalted butter
- 1/2 cup whole milk
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
Instructions
- Preheat oven to 400°F (200°C).
- Cut the top off the garlic bulb, drizzle with olive oil, wrap in foil, and roast for 30 minutes.
- Boil potatoes in salted water until tender, about 15 minutes.
- Drain potatoes and return to the pot.
- Squeeze roasted garlic cloves into the pot with the potatoes.
- Add butter, milk, salt, and pepper.
- Mash until smooth and creamy.
Notes
- For extra creaminess, use warm milk.
- Adjust salt and pepper to taste.
- Leftovers can be refrigerated for up to 3 days.
