Ingredients

- 2 lbs baby potatoes, halved
- 3 tbsp olive oil
- 4 cloves garlic, minced
- 1/4 cup grated Parmesan cheese
- 1 tsp salt
- 1/2 tsp black pepper
- 1 tsp dried rosemary
Instructions
- Preheat oven to 400°F (200°C).
- Toss potatoes with olive oil, garlic, salt, pepper, and rosemary.
- Spread potatoes evenly on a baking sheet.
- Roast for 35-40 minutes until golden and crispy.
- Sprinkle Parmesan cheese over potatoes and roast for 5 more minutes.
- Serve warm.

- Use freshly grated Parmesan for best flavor.
- Add red pepper flakes for extra heat.
- Leftovers can be reheated in the oven.
