Ingredients

- 2 whole garlic bulbs
- 2 tbsp olive oil
- 1 onion, chopped
- 4 cups vegetable broth
- 1 cup heavy cream
- 1 tsp salt
- 1/2 tsp black pepper
- 1 tsp thyme
Instructions
- Preheat oven to 400°F (200°C).
- Cut the tops off the garlic bulbs, drizzle with olive oil, wrap in foil, and roast for 40 minutes.
- Sauté chopped onion in a pot until translucent.
- Squeeze roasted garlic cloves into the pot and stir.
- Add vegetable broth, salt, pepper, and thyme. Simmer for 15 minutes.
- Blend the soup until smooth, then stir in heavy cream.
- Serve warm with crusty bread.
