A classic roasted leg of lamb seasoned with rosemary for a flavorful and tender dish.
Ingredients

- 1 leg of lamb (about 5–6 lbs)
- 3 tbsp olive oil
- 4 cloves garlic, minced
- 2 tbsp fresh rosemary, chopped
- 1 tsp salt
- 1 tsp black pepper
- 1 lemon, juiced
Instructions
- Preheat oven to 350°F (175°C).
- Rub the leg of lamb with olive oil.
- Mix garlic, rosemary, salt, pepper, and lemon juice in a bowl.
- Spread the mixture evenly over the lamb.
- Place the lamb on a roasting rack in a pan.
- Roast for 1.5 to 2 hours or until internal temperature reaches 145°F (63°C).
- Let rest for 15 minutes before slicing.

- Use a meat thermometer for accurate doneness.
- Adjust seasoning to taste.
- Leftovers can be stored in the fridge for up to 3 days.
