Description

A creamy and flavorful roasted red pepper dip perfect for parties or snacks.


Ingredients

Scale
  • 2 large red bell peppers
  • 1 cup Greek yogurt
  • 2 cloves garlic, minced
  • 1 tbsp lemon juice
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 1 tbsp olive oil

Instructions

  1. Preheat oven to 400°F (200°C).
  2. Cut red peppers in half and remove seeds.
  3. Place peppers cut-side down on a baking sheet.
  4. Roast for 20-25 minutes until skins are charred.
  5. Remove from oven and let cool.
  6. Peel off skins and discard.
  7. Combine roasted peppers, yogurt, garlic, lemon juice, salt and pepper in a food processor.
  8. Blend until smooth.
  9. Drizzle with olive oil before serving.

Notes

  • Store in an airtight container in refrigerator for up to 5 days.
  • Serve with pita chips, crackers or fresh vegetables.
