Description
A creamy and flavorful roasted red pepper dip perfect for parties or snacks.
Ingredients

- 2 large red bell peppers
- 1 cup Greek yogurt
- 2 cloves garlic, minced
- 1 tbsp lemon juice
- 1/2 tsp salt
- 1/4 tsp black pepper
- 1 tbsp olive oil
Instructions
- Preheat oven to 400°F (200°C).
- Cut red peppers in half and remove seeds.
- Place peppers cut-side down on a baking sheet.
- Roast for 20-25 minutes until skins are charred.
- Remove from oven and let cool.
- Peel off skins and discard.
- Combine roasted peppers, yogurt, garlic, lemon juice, salt and pepper in a food processor.
- Blend until smooth.
- Drizzle with olive oil before serving.
Notes
- Store in an airtight container in refrigerator for up to 5 days.
- Serve with pita chips, crackers or fresh vegetables.
