- 2 large carrots, peeled and chopped
- 2 medium parsnips, peeled and chopped
- 1 large sweet potato, peeled and chopped
- 1 medium beetroot, peeled and chopped
- 2 tbsp olive oil
- 1 tsp salt
- 1/2 tsp black pepper
- 1 tsp dried thyme
Instructions
- Preheat your oven to 200°C (400°F).
- Wash, peel, and chop all the vegetables into even-sized pieces.
- Toss the vegetables with olive oil, salt, pepper, and thyme in a large bowl.
- Spread the vegetables in a single layer on a baking tray.
- Roast for 30-40 minutes, stirring halfway, until tender and golden.
- Serve warm.

- Adjust seasoning to taste.
- Add other root vegetables like turnips or rutabagas if desired.
