- 2 lbs flank steak
- 1 large onion, sliced
- 1 green bell pepper, sliced
- 1 red bell pepper, sliced
- 4 cloves garlic, minced
- 1 can (14 oz) diced tomatoes
- 1/4 cup olive oil
- 1/4 cup white wine vinegar
- 1 tsp cumin
- 1 tsp oregano
- Salt and pepper to taste
- 1/4 cup chopped fresh cilantro
Instructions
- Cook the flank steak in a large pot with water until tender, about 2 hours. Remove and shred.
- Heat olive oil in a large skillet. Add onions, bell peppers, and garlic. Cook until softened.
- Add shredded beef, diced tomatoes, vinegar, cumin, oregano, salt, and pepper. Simmer for 20 minutes.
- Stir in cilantro and serve hot with rice or tortillas.

- Use a slow cooker for easier preparation.
- Add olives or capers for extra flavor.
