Description

A rich and creamy salted chocolate mousse with a hint of sea salt for a perfect balance of sweet and savory.


Ingredients

Scale
  • 200g dark chocolate (70% cocoa)
  • 3 large eggs, separated
  • 50g granulated sugar
  • 200ml heavy cream
  • 1 tsp vanilla extract
  • 1/2 tsp sea salt

Instructions

  1. Melt the dark chocolate in a heatproof bowl over simmering water. Let it cool slightly.
  2. In a separate bowl, whisk the egg yolks with half the sugar until pale and creamy.
  3. Fold the melted chocolate into the egg yolk mixture.
  4. In another bowl, whip the cream and vanilla extract until soft peaks form.
  5. In a clean bowl, beat the egg whites with the remaining sugar until stiff peaks form.
  6. Gently fold the whipped cream into the chocolate mixture.
  7. Carefully fold in the egg whites.
  8. Sprinkle sea salt on top and refrigerate for at least 4 hours before serving.
