Ingredients

- 1 1/2 cups all-purpose flour
- 1/2 tsp salt
- 1/2 cup unsalted butter, chilled
- 3–4 tbsp ice water
- 1 cup honey
- 1/2 cup heavy cream
- 3 large eggs
- 1 tsp vanilla extract
- 1/2 tsp flaky sea salt
Instructions
- Preheat oven to 350°F (175°C).
- Mix flour and salt in a bowl. Cut in butter until crumbly.
- Add ice water, 1 tbsp at a time, until dough forms.
- Roll dough into a pie crust and place in a pie dish.
- In a separate bowl, whisk honey, cream, eggs, and vanilla.
- Pour filling into the crust and sprinkle with sea salt.
- Bake for 40-45 minutes until set.
- Let cool before serving.

- Use high-quality honey for best flavor.
- Chill the dough before rolling for easier handling.
- Let pie cool completely to set.
