Ingredients

Scale
  • 1 1/2 cups all-purpose flour
  • 1/2 tsp salt
  • 1/2 cup unsalted butter, chilled
  • 34 tbsp ice water
  • 1 cup honey
  • 1/2 cup heavy cream
  • 3 large eggs
  • 1 tsp vanilla extract
  • 1/2 tsp flaky sea salt

Instructions

  1. Preheat oven to 350°F (175°C).
  2. Mix flour and salt in a bowl. Cut in butter until crumbly.
  3. Add ice water, 1 tbsp at a time, until dough forms.
  4. Roll dough into a pie crust and place in a pie dish.
  5. In a separate bowl, whisk honey, cream, eggs, and vanilla.
  6. Pour filling into the crust and sprinkle with sea salt.
  7. Bake for 40-45 minutes until set.
  8. Let cool before serving.
