- 1 medium pumpkin (about 3–4 lbs)
- 1 lb ground sausage
- 1 cup cooked wild rice
- 1 small onion, diced
- 2 cloves garlic, minced
- 1/2 tsp salt
- 1/4 tsp black pepper
- 1 tbsp olive oil
- 1/4 cup grated Parmesan cheese
Instructions
- Preheat oven to 375°F (190°C).
- Cut the top off the pumpkin and scoop out the seeds.
- Heat olive oil in a skillet over medium heat.
- Add onion and garlic, sauté until soft.
- Add sausage, cook until browned.
- Stir in cooked wild rice, salt, and pepper.
- Fill the pumpkin with the sausage and rice mixture.
- Sprinkle Parmesan cheese on top.
- Place pumpkin on a baking sheet and bake for 45-50 minutes.
- Remove from oven and let cool slightly before serving.

- Choose a pumpkin with a flat base for stability.
- You can substitute wild rice with brown rice if needed.
- For a vegetarian option, replace sausage with mushrooms.
