Description

Easy sheet pan balsamic chicken with vegetables for a quick dinner.


Ingredients

Scale
  • 4 boneless, skinless chicken breasts
  • 2 cups cherry tomatoes
  • 1 red onion, sliced
  • 2 bell peppers, sliced
  • 3 tbsp olive oil
  • 1/4 cup balsamic vinegar
  • 2 cloves garlic, minced
  • 1 tsp dried oregano
  • 1/2 tsp salt
  • 1/4 tsp black pepper

Instructions

  1. Preheat oven to 400°F.
  2. Place chicken breasts and vegetables on a sheet pan.
  3. Whisk olive oil, balsamic vinegar, garlic, oregano, salt, and pepper.
  4. Pour marinade over chicken and vegetables.
  5. Toss to coat evenly.
  6. Bake for 25 minutes or until chicken reaches 165°F.
  7. Let rest for 5 minutes before serving.
