Ingredients

- 4 boneless, skinless chicken breasts
- 2 cups cherry tomatoes
- 1 red onion, sliced
- 2 bell peppers, sliced
- 3 tbsp olive oil
- 1/4 cup balsamic vinegar
- 2 cloves garlic, minced
- 1 tsp dried oregano
- 1/2 tsp salt
- 1/4 tsp black pepper
Instructions
- Preheat oven to 400°F.
- Place chicken breasts and vegetables on a sheet pan.
- Whisk olive oil, balsamic vinegar, garlic, oregano, salt, and pepper.
- Pour marinade over chicken and vegetables.
- Toss to coat evenly.
- Bake for 25 minutes or until chicken reaches 165°F.
- Let rest for 5 minutes before serving.
