Ingredients

- 4 boneless, skinless chicken breasts
- 2 tbsp Cajun seasoning
- 2 tbsp olive oil
- 1 red bell pepper, sliced
- 1 yellow bell pepper, sliced
- 1 red onion, sliced
- 1 zucchini, sliced
- 1 tsp salt
- 1/2 tsp black pepper
Instructions
- Preheat oven to 400°F (200°C).
- Toss chicken with 1 tbsp Cajun seasoning and 1 tbsp olive oil.
- In a separate bowl, mix vegetables with remaining Cajun seasoning, olive oil, salt, and black pepper.
- Spread chicken and vegetables evenly on a sheet pan.
- Bake for 25-30 minutes until chicken is cooked through.
- Serve hot.

- Adjust Cajun seasoning to taste.
- Use any vegetables you prefer.
